My name is Sofia Malagoli, and this is not the story of just another company. It is the story of a choice. Counter-current. Deeply Italian. Radically personal.

In Modena there are acetaie that are older, larger, more famous. That is true. They have history, tradition, prestige. We do too.

But the real question is not who came first. The real question is: why choose Acetaia Malagoli Daniele today?

An engineering challenge… in reverse

I am the daughter of an engineer. And I am an engineer myself. My father Daniele devoted his life to rigor, calculation, precision. I followed the same path, earning a degree in civil engineering.

Yet, while studying structures and foundations, a different idea was growing inside me: turning my father’s passion – the patient care of barrels of Traditional Balsamic Vinegar of Modena (DOP) – into something greater.

Not a rebellion. A challenge. To myself, to my father, to the unspoken rules that say certain traditions should never change.

It became an engineering challenge in reverse: removing instead of adding, slowing down instead of speeding up, choosing time as the only true ally.

Staying, when everyone else was leaving

At a time when many young Italians were encouraged to leave the country in search of better opportunities, I chose to stay.

To stay here. In the Modena countryside. In my hometown.

Not for lack of alternatives, but out of conviction. I chose to make an ancient tradition my future. I chose to invest where I live, to belong to my land while opening it to the world.

This is how I have always imagined the Acetaia: my way of taking care of what I love, and at the same time, a gateway to the world.

What Acetaia Malagoli Daniele is today

Today Acetaia Malagoli Daniele is a small, family-run business, intentionally far from mass distribution.

You will not find us in supermarkets. We do not produce for large volumes. We do not take shortcuts.

Every bottle of Traditional Balsamic Vinegar of Modena (DOP) is made exclusively from cooked grape must, shaped by years of aging and by deliberate, uncompromising choices.

But the Acetaia is not just about production. It is experience. It is hospitality. It is connection.

Each year we welcome visitors from all over the world – primarily from outside Europe – who choose to enjoy a guided acetaia tour in Modena, a Traditional Balsamic Vinegar tasting, or a stay in our Room & Breakfast inside the Acetaia.

We do not welcome distracted tourists. We welcome curious travelers.
