Acetaia Malagoli Daniele is not an industry, nor will it ever be. It is not present in large-scale retail, by choice: to preserve the truth and authenticity of Traditional Balsamic Vinegar of Modena, far from the compromises of mass production.
It is a family-run estate, intimate and welcoming, rooted in the Modenese countryside and open to the world through those who choose to take a guided tour of the Acetaia, enjoy a Balsamic tasting in Modena, or stay overnight in the charming Room & Breakfast with 4 rooms.

An engineering challenge… in reverse
Daniele, the founder, dedicated his life to engineering. His daughter Sofia followed his path and graduated in civil engineering. Yet, during those years, a different certainty grew inside her: she would transform her father’s hobby – caring for the barrels of Traditional Balsamic Vinegar – into a real business, strong enough to sustain her life.
Not a rebellion, but a challenge: to herself, to her father, to the world. A challenge that today allows travelers and food lovers to enjoy unique experiences such as a Traditional Balsamic Vinegar tasting paired with Modenese specialties, enriched by the chance to sleep at the Acetaia.

The birth of a dream
In 2015, Sofia won a public competition organized by the Municipality of Modena for opening a temporary store in the historic city center. At that time, she didn’t yet own a company, so she applied in her mother Barbara’s name – from whose vineyard came the grapes for the Traditional Balsamic Vinegar. That victory was the spark: the project could no longer remain a dream, it had to become a real enterprise.
Daniele, initially skeptical, soon realized that his daughter’s determination was stronger than any prediction. From that moment, Acetaia Malagoli Daniele took shape with a clear, unique identity.

Today: excellence, hospitality and authentic flavors
Today, the Acetaia welcomes guests from all over the world: not just tourists, but travelers in search of authenticity, culture, and taste. Each visit becomes a story, an encounter, a piece of Modena shared through food tours in Emilia-Romagna, authentic Balsamic tasting experiences in Italy, and the possibility to stay overnight at the Acetaia in the intimate Room & Breakfast.
Alongside its guided tours, the Acetaia offers a collection of Modenese delicacies: from the Traditional Balsamic Vinegar of Modena, the beating heart of its production, to artisanal chocolates created in collaboration with local masters, as well as the Savor Modenese and gourmet fruit compotes. These are culinary treasures that tell the story of the land and allow every guest to bring home an authentic piece of Modena, to enjoy at the table or to share as a precious gift.
The company is proudly led by women: Sofia guides a team of passionate women who put care, enthusiasm and expertise into every detail. Thanks to them, the Acetaia is not only a place of production, but a complete experience made of excellence, hospitality and sharing.
